A Donegal Whiskey That Uniquely Captures the Drama, Flavour and Magic of the Sea
Following in the footsteps of the multi-award-winning Silkie Irish Whiskey, The Dark Silkie is the latest addition to the Sliabh Liag Distillers list of locally produced spirits. Dark Silkie contains a core of triple distilled peated single malt whiskey which has been matured in ex-sherry casks. It has been expertly blended with a double distilled single malt which was matured in bourbon barrels. Then balanced with soft grain whiskey which was finished in virgin oak casks.
Inspired the strong tradition of storytelling prevalent in Donegal society, Dark Silkie takes its name from the mythical Silkies of the Donegal Coast, seal-like shape-shifting who shed their skin, often taking the shape of beautiful sea-maidens.
James Doherty’s childhood holidays in Donegal nurtured a love for the folk tales of the Sliabh Liag peninsula and more importantly a dream for the future possibilities of bringing legitimate distilling to the Donegal Gaeltacht.

An Dúlamán Irish Maritime Gin came first, from an inspired moment on Muckross Head, and is a remarkable gin by any stretch. The Silkie Original Blend was the first step in an ambitious whiskey journey. James and the team have sourced malt and grain whiskeys that when blended together deliver a signature soft mouth feel, fruity palate and a dark smokey character.
Legends of the Silkie
The Silkie takes its name from the ‘legends of the Silkie’, originating in Ireland, Scotland, and Iceland. They were the immortal fae-folk of the sea. They take the form of seals in the water but shed their skin when they come ashore, transforming into irresistible women.

The Legendary Dark Silkie Blended Whiskey Tasting Notes
Sliabh Liag Distillers is smokin hot with this Irish blend, aptly named The Legendary Dark Silkie! Taking inspiration from historical 19th century Donegal whiskey recipes. The triple distilled peated single malt is at the core of this expression, peated to about 22ppm and matured in sherry casks. It’s then blended with a bourbon-matured single malt as well as a grain whiskey which was aged in virgin oak. A fruity, subtly smoky and dry Irish whiskey that will spark an interest in peated whiskey for anyone who tastes this fantastic dram!
Delicious orchard fruits, caramel sweetness with chalky dry smoke. If you smoke cigars this whiskey would be a perfect pairing. Light freshness combined with burnt wood, nuts, cigar box smoked ash, pencil shavings and spicy oak. The Dark Silkie reminds me of the first time I tasted Connemara 12 year old, I was blown away by the complexity. Behind the smoke, there’s fresh green apple, iced vanilla with ginger spice, oak, milk chocolate with burnt smoked spices.
Salted caramel and dark chocolate truffles. Opening out to oaky vanilla, ash wood tobacco and wood drying smoke. Think campfire beside the sea. There’s soft vanilla with spice, burnt sugar, smoke and hints of apple and a bounty of citrus too.
A nice soft mouthfeel coats your tongue with toasted nuts and sweet malt chocolate, gentle smoke dissipates into the background. It a light-bodied whiskey but has and a good spicy medium finish. Sip this one beside the fire as you watch the snow fall or listen to the wind and rain outside.
